recipe: black bean and corn salsa


welcome july!!!! phew here already?
okay yes i know i said i was going to give you the secret ingredient for the cookies. tomorrow! oh and yes for all of you that requested the pan de vonos recipe...i'm trying to make my mom stop long enough to sit down and write it down. she promises to write it down before she heads home... but for now here's my new favorite salsa and its just PERFECT for bringing to a BBQ for uh i oh i don't know, maybe this 4th of july weekend? it's so easy and fool proof.
there's something about having your kitchen savvy mother here to really jump start that feeling of "hey, i'm not that bad at cooking...look!" so here you go, the perfect salsa to bring to your neighborhood BBQ this forth of july:

black bean and corn salsa
what you will need:
1 can of corn
2 cans of black beans
2 large tomatoes
1 avocado
1 to 2 jalepeno pepper
1 red or white onion
a small bundle of cilantro
2 tablespoons of olive oil
1 tablespoon of redwine vinegar
3 to 4 tablespoons of lemon juice
1 tsp salt
1/2 tsp of pepper.

combine in a small bowl your olive oil, red wine vinegar, lemon juice, salt and pepper. whisk. set aside.

drain your corn and black beans. rinse your black beans.
chop up your tomatoes, onion, avocado, cilantro and jalepeno.
combine in a large bowl corn, black beans, tomatoes, onion, avocado, cilantro, and jalepeno.

pour over your ingredients your olive oil mixture, and stir in.

enjoy with chips, or as a side dish.
mmmmm.
and yes my mom was impressed.

I guess I could have gone tonight being that it is 2:30 and I am up...oh wait hubby gone and kiddos would probably need supervision...guess it is a good thing that the midnight showing was yesterday...

revisiting the team Jacob...you sure it isn't a team Lautner thing??? I mean that boy is pretty fantastically ripped...but I still like Edward better...

oh well we can still be friends.

Hmmm, I might have to try this variation! I'm always asked to bring my black bean salsa to get togethers. I like that I can throw it together in about 5 minutes:
3 cans black beans, 1 can mexicorn, 2 cans diced tomatoes with jalapenos, 1 bunch green onions, 2 fresh tomatoes. Rinse the beans, drain the corn, drain as much liquid off the canned 'maters as makes you happy (I don't like runny salsa), chop up the green onions and tomato, throw it all in a bowl - done! I admit...I've been known to eat it with a spoon. And it makes homemade enchiladas even more tasty when cooked into the filling.

I miss the movies. Perhaps I shall attend one this weekend!

Where did you get the idea your cooking needed serious improvement?! That salsa will be perfect for me: just after lunch, I told Honey that I needed new ideas of summer salads, because I don't want to bake/broil/fry/do-whatever-involves-heat when it is that hot (here it's 35°C, which is in the upper 90s for you, if I'm not mistaken).

This looks sooooo good, I am definitely making this (but I think I'll wimp out and replace the jalapeno peppers with milder ones -- I know, I'm a baby!)
Btw, what does pan de vonos mean? and what is it?

mmm. i love this salsa! i make it all the time (though i've never added the oil, vinegar, lemon juice - i'll have to try it that way). it's the BEST with tostitos with a hint of lime, though. seriously. MUCH better than regular tortilla chips. try it, you won't be sorry!

Made this recipe tonight for dinner. Good thing I halved it since there were only 4 of us. We put it on our burgers, we dipped chips into it and there is STILL a bit left over. YUMMMMMMMMMMO!
