(i can't believe it's) zucchini crisp recipe


i've become quite sentimental about traditions as of late.
i want "US" to have lot of them.

i want our kids to have the opportunity to expect things on certain occasions.
we're actually working on quite a few around here as we speak.

*like every morning after my early a.m. walk, i wake everyone up and we read the scriptures together as a familiy before school and work.
*like every night i sit and read to the boys in bed for half an hour.
*like every friday night we pig out on ice cream, red vines, pop corn, and hot chocolate, while watching the new star wars the clone wars.
*like every time a kid looses a tooth...the tooth fairy gets lost to the middle of nowhere and takes two nights to get to us. (hey she's kind of loopy like that okay?)

and a new one:
with my new found love of cooking {insert GASP here}
i want to make this (i can't believe) its zucchini crisp every year when we harvest our ginormous zucchinis.

(I CAN’T BELIEVE IT’S) ZUCCHINI CRISP!

8-10 cups Zucchini

-Peel, quarter length wise, remove seeds, slice it into small slices (like apples).

2/3 cups Lemon Juice

1 cup Sugar

½ tsp. Nutmeg

1 tsp. Cinnamon

1 tsp. Vanilla

Cook zucchini in lemon juice until tender. Add 1 cup sugar, nutmeg, cinnamon and vanilla. Simmer.

Meanwhile:

4 cups Flour
2 cups Sugar
½ tsp. Salt
1 ½ cups Butter (3 Sticks!!!!)

Mix flour, sugar, salt, and cut in butter. Put ½ of crumb mix in bottom of greased 9x13 pan. Bake at 375 degrees for 10 minutes.

Meanwhile:

Add ½ cup of crumb mix to zucchini to thicken, and simmer while the crust cooks.

Pour zucchini mixture on top of cooked crust. Add 1 tsp. cinnamon to the rest of crumb mix and mix together and pour over zucchini. Bake at 375 degrees for 30-40 minutes until bubbly.


and if you are wondering:


Yes, i let the kids assume it was apple crisp.
No, i am not going to correct them.
and YES, this most definitely, when they find out the truth, will go into their mental folders of "things i will tell my therapist" when they will feel the need to go to one in like 25 years.

I forgot that I wanted to say more than that. I guess that yummy picture made my mind wander for a moment ;-)

I think rituals are very nice and important, especially for little ones indeed. I notice that my children do better when they know what to expect and besides that: It's fun to build rituals together, to look forward to fun things to come, to enjoy those little things that are typical for a family.

Love, love, love all the traditions! Although we do not yet have children, I was thinking this weekend I would really like to have great conference weekend traditions so my kids will look forward to that weekend--do you have any conference weekend traditions to make the weekend one your family looks forward to?

Good for you guys! Family traditions are glue that holds families together! Amazing things really can be done with ginormous zucchini huh. :-) ♥
oh ya, the tooth fairly is always lurpy at our house as well.....I've know her to be a week late! lol

I thought I'd heard it all, but not Zucchini Crisp! Once when we were newly married I made a mock apple pie out of Ritz crackers and it tasted just like apple pie. Sounds like this one can be masked also.

This is a new one for me, zucchini crisp!? Now I wish our zucchini plant was still cranking out zucchini. I HAVE to try this out on some unsuspecting soul, lol.

The zuchinni crisp sounds good. I'll have to try it out on my company that's coming to visit me this weekend.

My kids loved tradtions, too, even though they are much older than yours. Every once in a while I'll think "they're too old for this". For example: baking and decorating Halloween cookies. I'll invite my grandkids over to decorate cookies, and my kids are decorating them, too.

We did a tradition yesterday. I blogged about it. It's something we do every year to remember my mother, who passed away 20 years ago. It's not sad, it's just my way of keeping my mom's memory alive.

You're trying to make me actually cook aren't you? Delicious looking photo, and telling me your kids ate it... who will be there to pick me up when I've messed up the entire kitchen, baked my heart out and the 3 little people say "I'm not trying THAT".

I also make a sweet Relish from Zucchini and it's SOOOOO GOOD! It's uses 12 cups of Zucchini a great way to use all that Z. stash!

so yummy! When I saw your pics of Zucchini the other day......it reminded me of our Bishop's wife in our old ward who made Zucchini pie (tasted like apple pie). I thought it was good/yummy. But I thought, why not just use apples? I guess we you have a garden boiling over with zucchini you use those instead! Great pictures. Yummmmy.

Yum-o! Thanks for sharing. I think my favorite part is that the kids ate it, liked it, and didn't know the difference! Makes me wish I had some garden-fresh zucchini...guess store bought might work. : )

I feel strongly that traditions are very important. We are trying to instill some with our young family. Friday night movie and pizza night is a fun one we like. Another one of our traditions, like yours is...the toothfairy taking her sweet-time getting here! : ) Have to say, I like the note left at Marie's house..."at a meeting for the next few days"...perhaps something along those lines will make an appearance at our house in the near future. : )

That looks and sounds delicious! Think it would also work passing it off as apple to my husband? He's got a thing against zucchini! But he also will not touch soy milk but didn't seem to mind it in the corn muffins. Oh, that's only because I didn't mention it. lol

I made the zucchini crisp on Friday! It really did taste like apples. I couldn't keep it a secret though. I only let my husband take two bites before bursting out, "It's zucchini!" I think I am going to try it in a regular pie crust this week - that crumb was VERY rich. Thanks!

I have a booklet full of yummer recipes for those green wonders that we eat all summer. This might be the yummiest by far. And, it reminds me of Laura Ingalls' mom when she used some squash to make Pa an "apple" pie. Uh huh... she did it, too.... and Laura never needed therapist...though she did write a lot, which is very therapeutic!

Is it being used for it's taste or does it blend into any flavor?

I see chocolate zucchini cakes all the time and have always wondered.
