the first frost hit last night,
so i have all my apples to pick.
i have my hands in so many new projects,
some i can show,
a few i cant.
i need to take a little blogging break.

wish i could take it off your hands, but i have a feeling we don't live in the same area :) i just freeze it to make zuchinni bread, cookies, and waffles when the cravings hit! good luck...or just let your kids carve the big suckers and make boats!! so fun, used to do it as a kid all the time.
Vanessa too bad we aren't closer I would take those of your hands. We didn't have a very good crop this year. Probably due to frost late in the season. I love to make Zuchinni relish, I have a great recipe and it is soo easy and very tasty.
I haven't had that much zucchini in a long time. Unfortunately, like the other comments, I don't think zucchini would ship well or I'd definitely help you out. Have a nice break, get lots done, and then hurry back to us.

Oh Wow... I don't think they post well...LOl... try pureeing them.. like Jessica Seinfeld does in Deceptively Delicious... yum yum... then add to chocky cake and all sorts...

The only time people in small New England towns lock their cars is during zucchini season.. otherwise, when they return from shopping, the back seat is filled with giant zucchini!

My favorite way to eat zucchini is in "apple" pie. ;)

so, yeah, i'm jealous! i'd love some zucchini! i have an awesome recipe for "can't believe it's zucchini crisp." it tastes just like apple crisp and there is no way of telling that you're eating zucchini and not apples! it's INCREDIBLE and my family loves it....

Dang! I just asked my mom last night if I could have her only zucchini, to try this fried/baked zucchini dish, and she said she had plans for it! I TOTALLY want one of those! I live in Utah... can you mail me one? lol

i shredded my extra zucchini and froze it for zucchini bread...will I actually use it or will it get freezer burnt...probably the 2nd option buuuut it made me feel better for the moment!

wow! i wish i could take some of your zucchini. my garden has produced only ONE zucchini. pesky rabbits!
Okay, I'm adding to the recipes. Zucchini Casserole....
Ingredients:
6 cups shredded zucchini
1/2 cup chopped onion
2 boxes stuffing mix (chicken flavor)
1 cup sour cream
1 cup shredded carrots
1 can creme of chicken soup
1 cup melted butter
Cook zucchini and onion in boiling water for five minutes. Drain and set aside. Mix together soup, carrots and sour cream. Fold in zucchini and onion. In a separate bowl mix butter and stuffing mix and place 1/2 along bottom of 13 by 9 inch pan (spray with Pam first). Then put vegetable mix over top. Top with the rest of the stuffing mix. Bake at 350 degrees for 30 minutes. Enjoy!
this post made me laugh because I was in the kitchen all day shredding zucchini to freeze, making zucchini bread and zucchini muffins and zucchini enchiladas. :) you should've seen my kitchen at the end of the day! :)
I seem to remember someone, maybe it was you, worried that nothing would grow in their garden?? : ) If I lived closer, I too would happily take some zucchini's off your hands. I'm thinking shredding them and freezing them would be a good way to go. Then again, taking a box to the church on Sunday for giving away is a good option...unless everyone there also had as bountinful a crop. Buena suerte!

Grill it!
grilled home-grown zucchini is heavenly!
Simply crush a few cloves of garlic & cover with some olive oil. Let set a few minutes.
slice zucchini lengthwise into 1/4 - 1/3 inch thick stips and brush both sides with your garlic oil
sprinkle with salt
grill - takes about 15 minutes. They're done when tender & beginning to be sort of translucent.
Once you try this ~ you'll be stealing back your zucchini :-) it's that good!
